Chicken noodles with avocado, watercress and sesame seeds

- 2 chicken breasts, sliced
- 250g fresh egg noodles
- 2 avocado halves, sliced
- 1 chilli, sliced
- 2 cloves garlic
- 2 tablespoon ginger, minced
- 100g watercress
- 2 tablespoons white sesame seeds
- Soy sauce
- Roasted sesame oil
- Vegetable oil, for frying
- Add a little vegetable oil to a wok on the highest heat and stir fry the chicken slices until browned.
- Add the garlic, ginger and chilli and fry for 10 seconds before adding the noodles and avocado slices.
- Add a dash of soy sauce and fry for another minute, constantly moving the ingredients about in the wok.
- Before serving, add the watercress, drizzle a little sesame oil over the noodles and sprinkle with sesame seeds.
- Serve.
- Careful with the chilli - remove the seeds if you do not like it that hot. Or add more if you do!
- If you cannot find fresh noodles, soak dried egg noodles in warm water for 5 minutes then coat in sesame oil until you are ready to fry.
- This would also work very well with seafood or if you are vegetarian add more avocado slices and some sliced mixed peppers.
