Smoked mackerel salad with spinach & avocado

Serves: 2

Ingredients:
  • 250g spinach
  • 2 rashers bacon
  • 2 fillets smoked mackerel, broken in to bite-sized bits
  • 2 avocado halves, diced
  • 1 egg
  • 1/2 red pepper, cut into strips
  • Olive oil
  • Juice of 1/2 lemon
  • Salt & pepper
Instructions:
  1. Place the egg in cold water and bring to the boil.  SImmer for 3 minutes and remove from heat.
  2. Grill or fry the bacon to your liking and slice into strips.
  3. When the egg is cook enough to handle, shell and cut in half.
  4. Mix the spinach, bacon, mackerel, avocado and pepper strips and dress with olive oil and lemon juice.
  5. Season with a little salt & pepper and serve with the egg half on top.
