Smoked mackerel salad with spinach & avocado

- 250g spinach
- 2 rashers bacon
- 2 fillets smoked mackerel, broken in to bite-sized bits
- 2 avocado halves, diced
- 1 egg
- 1/2 red pepper, cut into strips
- Olive oil
- Juice of 1/2 lemon
- Salt & pepper
- Place the egg in cold water and bring to the boil. SImmer for 3 minutes and remove from heat.
- Grill or fry the bacon to your liking and slice into strips.
- When the egg is cook enough to handle, shell and cut in half.
- Mix the spinach, bacon, mackerel, avocado and pepper strips and dress with olive oil and lemon juice.
- Season with a little salt & pepper and serve with the egg half on top.
- For a soft-boiled egg, after 3 minutes immdiately remove from the heat and place under the cold tap, to stop the cooking process.
- Add more colour to this salad by adding mixed peppers, tomatoes or prawns.
- If smoked haddock is not your thing, try grilled chicken or even haloumi.
