Tuna, cucumber & chunky avocado sandwich

- 1 can cook tuna
- Cucumber half, cut into thin slices
- 100g chunky avocado pulp
- 4 slices white bread
- Squeeze of mayonnaise
- Drain the tuna and mix with a little mayonnaise
- Lay the bread slices out and spread the avocado pulp over each slice.
- Top each slice with the cucumber slices and add the tuna/mayonnaise mixture, spreading evenly.
- Carefully fold the slices together, cut into triangles and serve.
- Add a little chopped red onion or sliced spring onion for a bit more bite in this sandwich.
- For some heat, add smoked paprika to the tuna mixture.
